Grows from mid-March to early July in the garden. Perfect for use in many dishes, but they should be shelled first. They can also be kept for later use, but the plants should be removed when the pods are parchment-like and dried in the wind. Beans should be kept dry. It's best to soak them overnight before use. Stick lapwing bean with beans that look like lapwing eggs. Only eat the harvested seeds, not the skin of the pod. When cooked, the seed coat is thin and deliciously soft.
